Frankie grew up in an Italian household where food wasn’t just fuel—it was tradition, made by hand and never rushed. Quality wasn’t optional; it was expected.
“I have the ultimate sweet tooth. I am always on the hunt for delicious desserts. When we go out, I want to try all the desserts on the menu. There was a period of time I was eating gluten free and I couldn’t find a delicious and clean ingredient cookie. They all had soy, vegetable oils, weird binders, food coloring and other things I couldn’t pronounce and they tasted like cardboard. So I decided to make one myself. They were incredible so I started making and sharing them with my friends and family.
On one occasion I brought them to my friend who’s wife has a gluten-allergy. With her allergy she rarely experienced delicious desserts, and she couldn’t believe how good they were. Her excitement planted a seed in me that people were in search of treats that didn’t compromise on ingredient quality or flavor.
I baked that original gluten-free walnut chocolate chip cookie regularly and over the course of 4 years, while adding to my recipes, developing more flavors and styles, including non-gluten free cookies. Throughout I was always guided by finding the best quality, cleanest ingredients possible. Grass-fed butter, pasture-raised eggs, organic cane sugar, organic unbleached flour, sea salt. Clean. Wholesome. Real.”
Brittany’s background is rooted in the art of hospitality, where food and health are the main channels she uses to express this inspiration into the world. For her, it’s about so much more than just food.
“I met Frankie while working with an Italian restaurant. Having an intimate knowledge of Italian food culture, we immediately bonded over our shared love for nourishing handmade food as the centre-piece for people coming together in connection. I have worked in food service and nutrition in one way or another my entire adult life. As soon as I realized I had met a health-oriented Italian baker with passion and integrity, I knew we would create something special together!”
And Francis? Creating meaningful connections and sharing experiences with lasting impact are what drives and motivates him every day.
“Frankie, Brittany and I met as neighbors and became fast friends, connecting weekly for afternoon coffee and cookies. I was blown away by how amazing his cookies tasted and started to learn about his passion for baking. I could tell how much of a difference the pure ingredients made, they were truly the best cookies I had ever tasted.”

We didn’t plan this—life just had its way. A few espresso-fueled afternoons around the kitchen table turned into a tradition of our own, with Frankie’s cookies front and center. We tried going out, but the best experience was always at home: great company, good coffee, and cookies that blew us away.
So we took that feeling—warm, welcoming, uncompromising—and built something to share with others. That’s how Frankie Bakes came to be.
