Our Story
Frankie Bakes
A play on Frankie’s DJ name, Frankie Shakes (now streaming on Spotify ;).
Growing up in an Italian family that revolved around coming together around the table for hours to eat traditional food, made by hand, with simple, quality ingredients the same way the generations before them did. His mother was always baking something, from sourdough bread for family dinner, to cookies for the neighbor's baptism, to cheesecake for a special birthday treat. His father, curing prosciutto, hand making sausages and sugo, and fermenting red wine in the cantina in the basement. Instilling in Frankie an appreciation for delicious food made well, and the joy and happiness it brings into one's life.
As he grew, he became interested in electronic music and began attending raves, DJing, and producing his own music as a hobby. By trade, he studied and developed his career in software engineering. #technerd
Frankie:
I have the ultimate sweet tooth. I am always on the hunt for delicious desserts. When we go out, I want to try all the desserts on the menu. There was a period of time I was eating gluten free and I couldn’t find a delicious and clean ingredient cookie. They all had soy, vegetable oils, weird binders, food coloring and other things I couldn’t pronounce and they tasted like cardboard. So I decided to make one myself. They were incredible so I started making them and sharing them with my friends and family, the way my mother offered treats to friends and neighbors growing up.
On one occasion I brought them to my friend's celiac wife. She couldn’t believe how delicious they were. With her condition she rarely experienced delicious desserts, and she totally freaked out. She really reaffirmed to me not only that people would want to buy these, but that gluten free cookies could taste this good. She planted a seed and that’s when a light bulb turned on for me.
I baked that original gluten-free walnut chocolate chip cookie regularly for 4 years, tweaking the recipe based on feedback until it was just right. Refining it as I went, always guided by finding the best quality, cleanest ingredients possible. Grass-fed butter, pastured eggs, organic cane sugar, organic unbleached flour, sea salt. Clean. Wholesome. Real.
Over the years, I added to my recipes and developed more flavors while maintaining my standard of high quality ingredients. No gimmicks, no fillers; just real ingredients of the highest quality I could find.”
Frankie uses music and food as creative outlets to share happiness with the world.

Brittany:
I met Frankie while working at an Italian restaurant (a Toronto institution) that I had been with for over a decade. Having an intimate knowledge of Italian food culture, we immediately bonded over our shared love for nourishing handmade food as the centre-piece for people coming together in connection. I have worked in food service in one way or another my entire adult life: as a line cook, a server, and facilitating training and development for service staff in restaurants, to operating a juice business, teaching private clients how to cook for themselves, and offering nutritional counselling as a holistic health coach. As soon as I realized I had met a health-oriented Italian baker with passion and integrity, a whole trajectory of potential opened up!”
Fast forward to West Palm Beach Florida. Frankie and Brittany sitting around the kitchen table with friends week after week, drinking espresso and eating cookies because they are genuinely the best espresso and baked treats you can find in town. And that's when we decided it was time to co-create something together and share this delight with others.
